Description:
Delicious soup for long, cold Wisconsin winters! Use oil and increase broth to avoid milk while on Cleanse
Ingredients:
1 Tbsp butter
1 lg sweet onion, diced
1 Tbsp curry powder
2 med yams or sweet potatoes (about 1⅓ lb total), peeled and diced
4 c chicken or vegetable broth or stock
½ c milk
Fresh chives, cut into 2" pieces (optional)
Directions:
MELT butter in saucepan over medium heat. Add onion, curry powder, and ¼ tsp pepper. Stir until aromatic, about 5 minutes. Add yams and broth. Simmer, covered, until vegetables are tender, about 30 minutes.

TRANSFER to blender in batches and puree until smooth. Stir in half-and-half until thoroughly combined. Season to taste and garnish each serving with a few chives, if desired. (Makes about 5 cups.)
