Meatloaf ~ Turkey or Beef

Description:
This easy recipe for gluten-free meatloaf makes a big loaf -- which usually leaves an ample amount for leftovers. (Enjoy after Cleanse.)
Ingredients:
2 pounds lean ground Beef or Turkey
2 large eggs
1/2 cup milk or applesauce
1 cup Rice Krispies
1 medium chopped onion
1/4 cup chopped green pepper (optional)
2 teaspoons gluten-free Worcestershire sauce
1/2 cup ketchup mixed with 1/4 cup brown sugar or honey
Directions:
Preheat oven to 400° F

Combine all ingredients in a large mixing bowl. Use your hands to thoroughly blend the mixture. I like to use disposable gloves for this job! Add a small amount of milk or water if necessary to make the mixture moist.

Use a large spatula to turn the meat mixture into a 9x5x3-inch loaf pan. Press down and smooth the top.

Bake in preheated oven for 30 minutes and carefully remove pan and pour off excess fat. Spread ketchup & honey or brown sugar mixture over the top of loaf, return to oven and bake for an additional 30 minutes. Again, carefully pour off excess fat and serve warm.
