Lowfat Breakfast Meal
Per serving: 113 calories, 17 g protein, 5 g carbohydrates (4 g sugar), 2 g fat, <1 g saturated fat, 20 mg cholesterol, trace fiber, 412 mg sodium






Ingredients:
Olive oil spray
4 ounces spinach
4 ounces feta chicken and/or turkey sausage, sliced lengthwise and then chopped into 1/2" pieces
1 cup diced onion
1 cup diced pepper
2 cups all-natural egg substitute
Sea salt, to taste
Fresh ground black pepper, to taste
Directions:
Preheat oven to 400 F

Place a medium oven-safe nonstick skillet over high heat. Lightly mist the pan with the olive oil spray and add the sausage, peppers & onions. Cook for 4 to 6 minutes, or until all of the moisture is cooked away and the onions, peppers, and sausage are lightly browned.

Pour the egg substitute into a sprayed square baking pan over the browned veggies and meat. Bake for 12 to 14 minutes, or until the eggs are completely set. Season with salt and pepper. Cut into four squares and serve immediately.
